Valentine’s Day is officially just around the corner. Do you have your valentines written and ready?! Holidays are always so much fun to celebrate with the kids, from Christmas to Halloween and Easter. But one of my most favorite days of the year definitely has to be Valentine’s Day. I love the reds and pinks and hearts – it makes decorating and prepping festive recipes for the holiday so much fun. And these Valentine’s Day Funfetti Pancakes are definitely on the menu, making for the perfect way to kick off the morning to celebrate!

Valentine’s Day Breakfast

Pancakes have always been a favorite tradition of mine, ever since I was little. Any morning my mom pulled the blue box of Krusteaz pancake mix out of the pantry, I knew it would be a good day! I have so much fun doing the same thing with my kids now, and I love to play around with new ideas to make pancake mornings that much more special!

Ingredients for Valentine’s Day Pancakes

This recipe kicks off with Krusteaz pancake mix. You’ll also need water, festive Valentine’s Day sprinkles, strawberry frosting, and a splash of half and half. That’s it! I love to use mini heart sprinkles, but you can swap them out for any other fun option. The pancakes come together so quickly with Krusteaz. Plus, there’s no artificial colors, flavors, or preservatives in the mix.

How to Make Valentine’s Day Pancakes – Step by Step

First up, preheat your pan on medium heat. Prepare the pancake mix according to the directions on the Krusteaz box. Then, mix in your Valentine’s Day sprinkles and get to cooking!

Cook your pancakes until they’re golden and let them cool slightly.

I use the ultimate hack for the strawberry topping, and I’m so excited to let you in on the secret! Microwave store-bought strawberry frosting with just a splash of half and half until you reach your desired consistency. This thins out the frosting so you can pour it on top! Stack the pancakes, top them with the frosting, add a few extra sprinkles for decoration and dig in!
