These easy Groundhog Day pancakes turn a regular breakfast into a fun, memorable surprise using simple pancake mix and everyday toppings you already have at home. Perfect for busy mornings, they are cute, kid-approved, and require zero special skills or planning.

The other day, while scrolling through my camera roll, I stumbled across these photos from four years ago… when I surprisede the kids with these Groundhog Day pancakes. And instantly, I was pulled right back into that season of motherhood.
How I Made Our Groundhog Day Pancakes
That year, I surprised the kids with the cutest little Groundhog Day breakfast. Nothing fancy. Just regular pancakes made from Krusteaz pancake mix and decorated with whatever I already had in the kitchen.
For the groundhog’s face, I used a plain pancake. And for its ears, I sliced a small circular pancake in half.
I decorated the groundhog’s face with candy eyes, chocolate chips for the nose, banana slices for the cheeks, and marshmallows for the teeth. Luckily, I had all these things in my kitchen when I remembered at the very last minute that it was Groundhog Day! 😂.

If you are anything like me, these small holidays usually sneak up out of nowhere. I cannot tell you how many years I’ve forgotten groundhog day… until the day or afternoon of! ;) But somehow, that year, I actually remembered.

Looking back now, it is funny how something so small can feel so BIG years later. At the time, it was just breakfast. A quick, messy, throw-together moment before the day really started. But now… it feels like a snapshot of childhood. A reminder of how fast time flies.
The days are long… But the years? They fly by too darn fast!

An Easy Groundhog Day Breakfast Anyone Can Make
So if you are in the middle of winter too, feeling a little tired, a little over it, and counting down the weeks until spring, this is your reminder. It does not have to be elaborate. It does not have to be perfect. Sometimes it is just pancakes, a few pantry ingredients, and a moment that ends up meaning more than you ever expected 🥞🤎

Groundhog Pancakes

Ingredients
- 1 box Krusteaz Pancake Mix
- 6 Candy eyes
- 3 Chocolate chips
- 6 Banana slices
- 6 Mini marshmallows
Instructions
- Prepare the pancake mix according to the directions on the box.
- Heat a nonstick pan or griddle over medium heat.
- Cook 3 regular-sized pancakes for the face, then make 3 smaller circle pancakes for the ears.
- Let pancakes cool slightly before decorating.
- Cut small pancake circles in half and use them as the groundhog’s ears, placing one half on each top side of the larger pancake to create the face.
- Decorate the groundhog’s face by adding candy eyes for the eyes, a chocolate chip for the nose, banana slices for the cheeks, and mini marshmallows for the teeth.
