This delicious Baked Oatmeal is the perfect quick breakfast. With basic ingredients you most likely already have in your pantry, it’s a super-easy and delicious way to kick-start the day!

These Cinnamon Oatmeal Bars Never Last Long! ⭐

This is the easy recipe I go to when I feel a bit stuck about what to make for breakfast! Out of ALL the breakfast recipes I’ve made over the years, this baked oatmeal is a go-to!

Not only does it take minutes to prep and bake, but it even works as a hand-held treat too…. if you’re rushing out the door, it’s a good breakfast recipe to just take on the road!

So with that being said, it’s totally kid-approved, and I love that it’s so much better than anything I can buy from the store. Just saying! 😉

The first time I made a batch of this baked oatmeal, it was gone within the first day. I mean, like super fast.

We’re talking, it went from breakfast to snack time… and dessert too! It was then that I knew this recipe would be repeated many more times!

The chewy oatmeal texture just pairs perfectly with the cinnamon-sugar sweetness. It’s soooooo good! 💕

It’s actually FUN making this recipe! Measuring, mixing, and letting the oven finish it off (aka doing all the hard work) while you wait makes it a total breeze to make.

Plus, if the kids want to help create in the kitchen, these brown sugar cinnamon oatmeal bars are the perfect recipe for them to jump in and do their thing.

It’s like eating old-fashioned oatmeal (you know the kind that you make, add brown sugar, and then pour in some milk?!), but as a way more fun and delicious handheld treat.

Baked Oatmeal Ingredients

Love how this recipe is filled with simple ingredients you likely already have at home to make this cinnamon sugar oatmeal bake!

Quick oats – I like to use 1-minute oats or old-fashioned oats for the texture.

Sugar – For sweetness!

Milk – Helps to add a bit of liquid for the oats to soak up when baking.

Eggs – Binds together the ingredients.

Vanilla extract – For vanilla flavor.

Cinnamon – A must for the cinnamon flavor!

Brown sugar – Pack it firmly when measuring!

How To Make Baked Oatmeal

1. Mix ingredients

Combine the oats and sugar into a mixing bowl and stir.

In another bowl, mix together the milk, egg, cinnamon, and vanilla extract.

2. Combine

Combine the two mixtures from the bowls into one and stir.

3. Bake

Pour the oatmeal mixture into the baking pan and bake.

4. Top with Brown Sugar

Remove from the oven, top with brown sugar, then broil until golden.

5. Serve and Enjoy

Let the baked oatmeal cool a bit in the pan, then slice and serve!

Tips for the Best Baked Oatmeal Recipe

🩷Be sure that you give the baked oatmeal a bit of cooling time. If you try to cut and serve too early, it could crumble.

🩷Adding toppings is truly part of the fun! While these baked oatmeal squares can be eaten as is, adding whipped cream or fresh berries really enhances the flavor and makes it a party!

Storing your Baked Oatmeal

Once the oatmeal bake has cooled to room temperature, be sure to store it to keep it fresh. The easiest and quickest storage method is to add the leftovers to an airtight container. It keeps the air and moisture out!

Store the leftovers in the fridge and eat within 2 days. You can pop them into the microwave to warm up before enjoying again.

This cozy Baked Oatmeal is an easy breakfast that's perfect for busy mornings. It's made with simple pantry staples and bakes up soft, warm, and full of cinnamon flavor.

Ingredients 

  • 2 cups quick 1 minute or old fashioned oats
  • 1/3 cup sugar
  • 3 ⅓ cups milk
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/3 cup firmly packed brown sugar

Instructions 

  • Preheat the oven to 350°F.
  • Grease a 8-inch square baking dish with cooking oil or cooking spray.
  • In a large bowl, combine the oats and the white sugar.

  • In a medium bowl, combine the milk, egg, vanilla, and cinnamon and mix well.

  • Add to the oat mixture and mix until combined.

  • Pour the mixture into a baking dish then bake for 45 minutes.

  • Remove from the oven and sprinkle with brown sugar. Using a spoon or spatula spread the sugar into a thin layer.

  • Broil in the oven for 2 minutes, or until the sugar browns slightly.

Notes:

  • Baked oatmeal creates a perfect base for additional mix-ins or toppings. Mix in blueberries, chocolate chips, etc. before baking.
  • Spread a thin layer of peanut butter on top of the baked oatmeal after baking, or serve with maple syrup, get creative!
  • We prefer quick oats for this recipe as they are more creamy/custardy. If you prefer a more textured oatmeal old fashioned oats are better suited.
