Pancake Muffin Recipe

This pancake muffin recipe requires only a handful of ingredients and comes together in minutes. It’s a guaranteed delicious hit!

It’s even perfect for spring brunches, Easter, or any fun weekend treat. Using Krusteaz pancake mix makes it incredibly easy—and yes, baking pancake batter in muffin pans is absolutely a game-changer!

Pancake Muffins Recipe Ingredients

You only need three ingredients to make these sweet little bites:

  • Krusteaz Pancake Mix – I use the “just add water” kind. So easy and always comes out fluffy!
  • Pastel M&M’s – Perfect for spring and such a cute topping.
  • Colorful sprinkles – Because everything is better with sprinkles. 😉
  • Optional: Serve them with maple syrup for dipping!

How to Make Pancake Muffins

  1. Preheat your oven to 350°F.
  2. Prepare the Krusteaz pancake mix according to the package directions.
  3. Spray a muffin tin with non-stick cooking spray (or use a non-stick muffin pan).
  4. Fill each muffin cup halfway with pancake batter.
  5. Top with pastel candies or sprinkles or mix and match!
  6. Bake for 15 minutes until lightly golden and cooked through.
  7. Cool on a wire rack for a few minutes, then serve warm with a drizzle of maple syrup.

That’s it! Super simple and such a cute twist on your everyday pancake routine.

Pancake Muffins Recipe FAQs

Can I use another mix in for the pancakes?

Absolutely! While I love Krusteaz because it’s my go-to pancake mix since childhood (I can still remember my mom buying big bags from Costco), you can use any pancake mix you have on hand. Just make sure to follow the mixing instructions on the box.

Can I use this recipe for holidays?

Yes! These pancake muffins are easy to customize for any holiday. Use red and green M&M’s for Christmas, heart sprinkles for Valentine’s Day, or spooky candies for Halloween. So fun!

Pancake Muffins Recipe Variations

Want to change it up? Here are a few fun ways to make this recipe your own:

  • Add mini chocolate chips for a classic twist.
  • Mix in blueberries or diced strawberries for a fruity version.
  • Top with cinnamon sugar for a donut-inspired vibe.
  • Use festive paper muffin liners to match your holiday or party theme!

How to Serve

These muffin pancakes are perfect for breakfast-on-the-go or for dipping with a little bowl of maple syrup. You can also add a side of fruit and yogurt for a fun little brunch setup.

Oh, and did I mention, they’re also adorable on a tiered tray for a spring party or Easter morning spread?!

How to Store

Leftover pancake muffins can be stored in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. Warm them in the microwave for 10–15 seconds before serving.

They also freeze beautifully! Just pop them in a freezer-safe bag, then thaw and reheat when you need a quick breakfast.

We usually just let ours defrost on the counter. You can always microwave too. =)
