Let me tell you, this Chicken Broccoli and Rice Casserole has saved dinner on so many busy nights. It’s so easy to put together, and you can even make it ahead. The combination of chicken, broccoli, and rice in a creamy sauce is just so comforting. It brings back memories of my mom’s cooking from my childhood. Those good old days!

Our family loves this easy dinner recipe so much, we have it at least once a month. This Chicken rice broccoli casserole combines tender chicken, broccoli, and creamy rice for a satisfying meal. Think of it as a flavorful upgrade to ‘No Peek Chicken,’ with added broccoli—that’s exactly how I made it!

All you need to make this chicken broccoli casserole is some instant rice, cream of chicken soup, chicken, a few seasonings, broccoli, and your favorite shredded cheese – that’s all it takes to make this easy family dinner recipe.

Just remember, Minute Rice, or similar instant rice, is going to be your best friend! It’s the key ingredient in this chicken broccoli bake, as it cooks evenly and helps hold all the flavors together.

  • Storage: Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
  • Freezing: For longer storage, freeze before or after cooking, using airtight containers.
  • Make-Ahead: Assemble the casserole up to 24 hours in advance and refrigerate. Bake as directed, adding extra time if needed.

Ingredient Substitution:

  • If you don’t have cream of chicken soup, cream of mushroom soup is a great alternative as well.

Chicken Broccoli Rice Casserole

Equipment

  • 1 13×9 baking dish

Ingredients 

  • 2 cups instant rice
  • two cans 10.5 oz cream of chicken soup
  • 2-3 chicken breasts
  • salt free lemon pepper seasoning
  • 1/2 packet Lipton's onion soup mix
  • 1 1/2 cups fresh broccoli florets
  • 1 1/2 cups shredded cheese of your choice

Instructions 

  • Preheat the oven to 375F.
  • Add instant rice, cream of chicken soup, and 1 can of water to a 13×9 baking dish then mix until evenly combined.

  • Cut chicken breasts into smaller bite sized pieces and season with lemon pepper then pound with a meat mallet to tenderize (optional). Place chicken over the rice in the baking pan and season with Lipton's onion soup mix.

  • Evenly top chicken with broccoli and cheese.

  • Cover with foil and bake in the oven for 1 hour. Uncover and Broil for about 2-4 minutes until Cheese is Golden Brown (optional). Let cool for a few minutes then serve.
