Just remember, Minute Rice, or similar instant rice, is going to be your best friend! It’s the key ingredient in this chicken broccoli bake, as it cooks evenly and helps hold all the flavors together.

Chicken Broccoli Rice Casserole
Equipment
- 1 13×9 baking dish
Ingredients
- 2 cups instant rice
- two cans 10.5 oz cream of chicken soup
- 2-3 chicken breasts
- salt free lemon pepper seasoning
- 1/2 packet Lipton's onion soup mix
- 1 1/2 cups fresh broccoli florets
- 1 1/2 cups shredded cheese of your choice
Instructions
- Preheat the oven to 375F.
- Add instant rice, cream of chicken soup, and 1 can of water to a 13×9 baking dish then mix until evenly combined.
- Cut chicken breasts into smaller bite sized pieces and season with lemon pepper then pound with a meat mallet to tenderize (optional). Place chicken over the rice in the baking pan and season with Lipton's onion soup mix.
- Evenly top chicken with broccoli and cheese.
- Cover with foil and bake in the oven for 1 hour. Uncover and Broil for about 2-4 minutes until Cheese is Golden Brown (optional). Let cool for a few minutes then serve.
