I’ve tested a lot of dinner ideas, and this one is seriously a keeper. As a mom of two, I know the value of finding a recipe that’s easy, fun, and a guaranteed hit at the dinner table. And yes, this Dorito Casserole is exactly that!

Back-to-school season is always a little wild in our house (anyone else feel like the calendar fills up overnight?!), so I’m constantly reaching for quick and comforting meals that the kids get excited about. Easy recipes like taco pizza rolls, baked ziti, and burger tacos are all on repeat, but this Dorito casserole has officially joined the lineup. This dinner recipe is packed with easy, everyday ingredients, most of which you probably already have in your pantry or fridge. Here’s what you’ll need:

  • Nacho cheese Doritos – these give that Doritos casserole its signature cheesy crunch and bold flavor.
  • Cooked, shredded chicken – I love using rotisserie chicken to save time.
  • Corn, diced tomatoes & green chilies – add sweetness, flavor, and a little kick.
  • Black beans – adds extra protein to make your dinner more filling.
  • Cream of chicken soup & sour cream – this duo makes the filling super creamy, making it a comfort meal.
  • Taco seasoning – brings that bold, Tex-Mex flavor we all love.
  • Taco blend shredded cheese – because melty cheese makes everything better.
  • Chopped cilantro – Totally optional, but it adds the prettiest pop of color on top.

How to Make Dorito Casserole

Ingredients 

  • 1 bag Doritos, nacho cheese
  • 3 1/2 cups shredded chicken
  • 1 (12-ounce) can corn
  • 8 ounces taco blend cheese
  • 1 (10-ounce) can diced tomatoes
  • 1 (4-ounce) can green chilies
  • 1 can cream of chicken soup
  • 8 ounces sour cream
  • 1 tablespoon taco seasoning
  • chopped cilantro

Instructions 

  • Preheat the oven to 350 F and grease a 9X13 pan.
  • Grab a large mixing bowl and add the shredded chicken. Add in the corn, tomatoes, beans, green chilies, cream of chicken soup, sour cream, and cheese and stir to combine.
