Calling all of the fall lovers out there! Fall is officially about to be in full swing over here. I seriously can’t get enough of this season! Who’s with me? With the weather getting cooler, and finally being able to do fall activities, it’s just the best. What’s your favorite fall activity to get the celebration started? Apple picking, hay rides, pumpkin patches and more – there’s so much to love about fall! Oh, and course, pumpkin spice lattes. ;)

This season is definitely one that calls for recipes with cinnamon and spice and everything nice. I absolutely LOVE anything with apple or pumpkin, and it’s definitely the season to celebrate those flavors! Growing up, this was always such a special season for us, and every year I love adding something new for the kids. It’s all about filling every day with a fun fall activity and a fall-themed dish to get the party started, and none of it has to be hard! I’m SO excited to share this super easy recipe for mini pie bites with you to get your celebration going in no time! What better way to get into the fall spirit than baking with apples and pumpkin pie spice!

Easy Apple Dessert Recipes

While I’m definitely a die-hard pumpkin lover, there’s just something about apple recipes in the fall that are at the top of the list. Who’s with me? Apple harvest is in fall, so it’s the perfect time to celebrate, and I love to do that by making something with fresh apples! Recently I tried this super easy mini apple bites recipe, and it was such a hit! Claire helped with it every step of the way. It was SO simple to put together and ready in minutes. Plus, they’re easy to eat and aren’t messy. Such a win-win for me!

Ingredients for Mini Apple Pie Bites

This recipe is super easy to make and will definitely be your next family favorite! It can be made quickly for breakfast in the morning or serve it as a fun snack. We might even make these for afternoon snacks after school soon! ;) For these mini apple bites, all you will need is brown sugar, pumpkin pie spice, unsalted butter, chopped pecans, a Granny Smith apple, and a tube of Pillsbury Crescent Rolls. That’s it! You can either use fresh apples if you’ve decided to go apple picking to celebrate fall, or just grab them from the store. I love to use the Granny Smith because of how tart the apple is – it balances perfectly with the brown sugar! But, if you only have other varieties of apples at home, just use those up instead!

How to Make Mini Apple Pie Bites

Let’s get this fall party started! To make these easy mini apple bites, first preheat your oven to 375 degrees and line a baking sheet with parchment paper so everything is ready when these are all prepped! Arrange your crescent roll triangles on the baking sheet. Then, mix together your ¼ cup of brown sugar and 1 teaspoon of pumpkin pie spice and sprinkle it on top of each triangle of dough.

Next up, we want to add some crunch! Grab 1/3 cup of chopped pecans and sprinkle each triangle with pecans. 

Next up is adding in the apples! Cut up apples using a knife or apple cutter. I like to keep the skins on! Once cut, toss the apple slices in the 3 tablespoons of melted butter.

Once your triangles are sprinkled and your apples are ready to go, place an apple slice on the wide end of each triangle of dough. Roll the dough to wrap it around each apple. Then brush each crescent roll with butter and dust it with a bit more pumpkin pie spice. Once all of this is done, put the tray in the oven! Bake the mini apple bites for 10-12 minutes, and cool them for five minutes, and they are ready to be served!

Ingredients

  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice plus more for sprinkling
  • 3 tablespoons melted unsalted butter
  • 1/3 cup chopped pecans
  • 1 Granny Smith apple cut into 8 slices
  • 1 8- ounce tube Pillsbury Crescent Rolls

Instructions

  • Line a baking sheet with parchment paper.
  • Mix brown sugar and pumpkin pie spice in a small bowl.
  • Toss apple slices in butter.
  • Arrange crescent roll triangles on baking sheet and sprinkle brown sugar mix onto each triangle.
  • Sprinkle each triangle evenly with pecans.
  • Place an apple slice on the wide end of each triangle and wrap dough around each apple.
  • Brush each crescent roll with butter and dust with pumpkin pie spice.
  • Bake for 10 to 12 minutes at 375 degrees until golden.
  • Cool for 5 minutes before serving.
