I am always on the search for a good frosting recipe. I’ve tried Vanilla Frosting recipes from Sprinkle’s Cupcakes, Billy’s Bakery and Magnolia’s Bakery, and while they all rank highly in my book, Magnolia Bakery’s Vanilla Frosting definitely wins. Sprinkles Cupcakes’ Vanilla Frosting was slightly too salty and Billy’s Bakery’s frosting was slightly too “milky” tasting, but Magnolia Bakery’s frosting recipe has it just right. This frosting pipes perfectly on to cupcakes to give them that gorgeous swirl, and I just love how the sprinkles stick so well to that kind of frosting.
Fun Fact: We used these cupcakes for this 6 hour photo shoot last year and the frosting with-held its shape perfectly.
1. In the bowl of an electric mixer fitted with the paddle attachment, combine butter, 4 cups sugar, milk, and vanilla.
2. Beat on medium speed until smooth and creamy, 3 to 5 minutes.
3. Gradually add remaining sugar, 1 cup at a time, beating for about 2 minutes after each addition, until icing reaches desired consistency; you may not need to add all the sugar. Store in an airtight container for up to 3 days.
