I’ve tested a lot of dinner ideas, and this one is seriously a keeper. As a mom of two, I know how nice it is to have a dinner that’s easy, fun, and a guaranteed hit at the table. And yes, this chicken dorito casserole is exactly that! 🙌

Back-to-school season is always a little wild in our house. Anyone else feel like the calendar fills up overnight?! 😅 I’m constantly reaching for quick and comforting meals that the kids get excited about, and this Dorito casserole has officially joined the lineup.

It’s cheesy, crunchy, packed with flavor, and comes together in under 30 minutes. I mean, Doritos for dinner?! You read that right! Such a fun dinner for a busy weeknight. 💛

And I love that this dorito chicken casserole is easy to switch up. You can use ground beef or turkey instead of chicken, skip the beans if your kids aren’t fans, or add veggies you already have on hand.

Dorito Casserole Recipe

This easy dorito chicken casserole is cheesy, crunchy, and packed with flavor. It comes together in under 30 minutes for a fun dorito casserole recipe the whole family can get excited about.

Ingredients 

  • 1 bag Doritos, nacho cheese
  • 3 1/2 cups shredded chicken
  • 1 (12-ounce) can corn
  • 8 ounces taco blend cheese
  • 1 (10-ounce) can diced tomatoes
  • 1 (4-ounce) can green chilies
  • 1 can cream of chicken soup
  • 8 ounces sour cream
  • 1 tablespoon taco seasoning
  • chopped cilantro

Instructions 

  • Preheat the oven to 350 F and grease a 9X13 pan.
  • Grab a large mixing bowl and add the shredded chicken. Add in the corn, tomatoes, beans, green chilies, cream of chicken soup, sour cream, and cheese and stir to combine.

  • Add in the taco seasoning and mix together well.

  • Add a layer of Doritos in the bottom of the pan. Crush with your hands to create an even layer.

  • Spread the casserole filling on top. Bake for 20 minutes.

  • Remove from the oven and add another layer of Doritos. Sprinkle with cheese and bake for 5 minutes to melt the cheese.

  • Remove from the oven and garnish with chopped cilantro before serving.

Notes

  • Make it spicy: Use spicy Doritos or add hot sauce if you want a little extra kick.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat leftovers in the oven or microwave. The Doritos will soften after storing, but the casserole will still be flavorful.
