Ina Garten’s Brownie Pudding is traditionally baked in a 2-quart oval baking dish, but I wanted to see if a standard 9×13 pan would work just as well. Let’s be honest, most of us aren’t buying a specialty baking dish for just one recipe. And let me tell you, the 9×13 dish baked up beautifully, and I was so happy with the results.

• All-purpose flour: Adds just enough structure so the pudding holds together without losing its gooey texture.
• Vanilla extract: Enhances and rounds out the chocolate flavor. Vanilla bean seeds can be used, but vanilla extract worked great for me. People substitute vanilla beans with vanilla extract all the time!

How to Make Ina Garten’s Brownie Pudding Step by Step
Step 1: Prepare the Oven and Pan
Preheat the oven to 325°F. Lightly butter a 9×13 baking dish. Melt the butter and set it aside to cool slightly.
Step 2: Whip the Eggs and Sugar
In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and pale yellow. This step helps keep the dessert rich without becoming dense.
Step 3: Combine the Dry Ingredients
In a separate bowl, sift together the cocoa powder and flour to remove any lumps.
Step 4: Mix the Batter
Reduce the mixer speed to low. Add the vanilla, followed by the cocoa and flour mixture. Mix just until combined. Slowly pour in the cooled butter and mix only until incorporated. Do not overmix.
Step 5: Set Up the Water Bath
Pour the brownie pudding batter into the prepared baking dish. Place the dish inside a larger baking pan and carefully add very hot tap water until it reaches halfway up the sides of the baking dish.

Believe it or not, brownie pudding is NOT meant to look fully baked in the center.

• The center should still look soft and slightly loose

• The middle will continue to thicken as it cools
Basically, if the center looks underdone, don’t worry, you’re doing it right.
9×13 Baking Dish Notes
Ina Garten’s Brownie Pudding recipe calls for a 2-quart (9 by 12 by 2-inch) oval baking dish, but I am glad to tell you that you do not need one to make this recipe.
The only difference between using the 2-quart baking dish versus the 9×13 baking dish is that your brownies will come out slightly thicker.
• Use a dish that is at least 2 inches deep
• Metal or ceramic pans both work well
Tips for the Best Ina Garten Brownie Pudding
• Whip the eggs and sugar until thick and pale
• Stop mixing as soon as the butter is incorporated
• Use very hot tap water for the water bath and make sure the water bath reaches halfway up the sides
• Trust the underbaked look in the center
