Easy Easter Appetizer

I love making this Easter veggie board because the options are endless. Really, you can get creative with what you already have on hand in your refrigerator or pantry.

You can customize your Easter bunny with different crackers, nuts, veggies, and dips. I mean… you could even use my family-favorite Greek Dip recipe!

Some might even argue this is a snack board, but either way, this appetizer truly is best of both worlds- SOOOO good!

How to make an Easter Bunny Veggie Tray

You can use a 20×13″ cutting board, sheet pan or platter. This is the exact rectangle serving tray I am using for my Easter bunny veggie board – it’s the best!

To create the Easter Bunny Veggie Tray, first spread hummus (your veggie tray dip) on a centered plate to form the bunny’s face, then add vegetable features like tomato nose, olive eyes, and asparagus whiskers.

Next, shape Nut Thin ears, fill with broccoli, and arrange remaining vegetables and nuts around the bunny.

Finally, serve fresh, customizing with preferred veggies and dips, and assemble on-site if traveling to maintain presentation.

What Dip Goes with a Veggie Tray

Classic: Ranch, Hummus (what I used for my snack board), French Onion.

Flavorful: Roasted Red Pepper, Dill.

Ready-made Dips: For super easy dip options, the grocery store’s vegetable section typically carries a selection of ready-made dips like Guacamole, Spinach Artichoke, and Yogurt based dips.

Easter Bunny Veggie Tray

Equipment

  • 20"X13" Tray You can also use a cutting board, sheet pan, or platter
  • 7"-8" round plate

Ingredients 

  • Two 10 ounce containers of classic hummus
  • One 6 ounce can of large black olives, drained
  • One 10 ounce package of cherry tomatoes
  • 6 asparagus spears
  • One 4.25 oz box of Nut Thins crackers
  • 1 red bell pepper, sliced
  • One 12 ounce bag of broccoli florets
  • 12-15 baby carrots
  • 1 cup of smokehouse almonds
  • 2 radish bunches, thinly sliced
  • 1 bunch of celery, cut into thirds
  • 8-10 slices of cucumber
  • One 12 ounce bag of cauliflower florets

Instructions 

  • Ears: Arrange the Nut Thin crackers into the shape of two bunny ears on each side of the bunny’s face. Add sliced red bell pepper pieces into the center of the crackers for a pop of color.

  • Broccoli Fluff: Fill the empty space between the bunny ears with broccoli florets, creating a fluffy texture.

  • Sides: Add cherry tomatoes and baby carrots below each of the bunny ears, creating a colorful border.
  • Almond Accents: Place smokehouse almonds below both the cherry tomatoes and baby carrots for a crunchy addition.
  • Radish Rows: Add thinly sliced radishes below the almonds on each side for a vibrant touch.

  • Olive Border: Below the radishes, add black olives to each side, continuing the border.

  • Veggie Sides: Below the olives, add celery sticks to one side and sliced cucumber to the other, offering variety.
  • Cauliflower Fill: In the space between the celery and cucumber, add cauliflower florets to complete the tray.
  • Hummus Bunny Face: Place the round plate in the center of your cutting board, sheet pan, or platter. Spread the hummus evenly onto the plate, creating the bunny’s face.

  • Facial Features: Decorate the bunny’s face! Use a halved cherry tomato for the nose, two black olives for the eyes, asparagus spears for the whiskers, and sliced red bell pepper for the mouth.

Notes

Transportation: If you’re transporting the veggie  platter, it’s best to bring the individual ingredients to the location and assemble there. If you must assemble your veggie tray beforehand, be prepared to readjust vegetables, nuts and dip after you transport, as ingredients may shift.
Freshness: Use the freshest vegetables possible for the best taste and appearance.
Customization: Feel free to swap out vegetables based on your preferences or what’s in season.
Dip Variety: Offer other dips alongside the hummus, such as ranch or spinach dip.
