These Bunny Butt Easter Cupcakes Are Our New Easter Favorite!

Friends, you may remember my viral Bunny Butt Funfetti Dip (that’s also in my cookbook). Well, these Bunny Butt Easter Cupcakes were totally inspired by that recipe!
Between the fluffy cupcakes, sweet frosting, coconut “fur,” and marshmallow bunny feet… be prepared! These bunny butt cupcakes are one of those Easter desserts that will get lots of giggles from the kids.
Let me tell you, these Bunny Butt Easter Cupcakes were such a hit at home. My kids absolutely loved them… and yes, they cracked up too!


These Cupcakes Are So Easy to Make
You can totally make these Easter cupcakes using your favorite boxed cake mix… that’s funfetti for me!
But, if you want to make things even easier, you could totally use store-bought cupcakes from the grocery store and turn them into the cutest bunny cupcakes instead.
Either way, your Easter cupcakes will turn out adorable.

Decorating is the Best Part
Coconut adds the perfect fluffy texture for bunny fur (just like I did for my Easter Chick Cupcakes), marshmallows create the cutest bunny feet and tails, and a little pink candy melt brings the whole look together.
If you want a shortcut, you can also use those tiny pink tubes of icing in the cake decorating aisle to pipe the bunny feet instead of candy melts.

How to Make Bunny Butt Easter Cupcakes
1. Bake Your Cupcakes
Bake your cupcakes according to the directions on the package and let cool.


2. Frost those Cupcakes
Spread a thin layer of vanilla frosting.


3. Dip in Shredded Coconut
Dip each frosted cupcake in a bowl of shredded coconut for the bunnie’s “fur!”


4. Assemble the Bunny Feet and Tail
Gently squeeze a large marshmallow to shape the bunny foot, then cut two small ¼-inch slices from it to make the toes. You should get about 4 bunny paws from each large marshmallow.
Cut a small marshmallow in half and place sticky side down in the center for the bunny tail.
Press the slices sticky side down onto the cupcake for the bunny feet and tail.

5. Melt & Pipe Bunny’s Paws
Melt the pink candy melts in the microwave and add to a piping bag or Ziploc bag. Pipe one large paw pad and three small toes onto each marshmallow foot.

6. Let Bunny Feet Set
Allow the candy melts to harden on the marshmallow feet before serving.

Bunny Butt Cupcakes

Equipment
Ingredients
- 15.25 oz box Pillsbury Funfetti cupcake mix
- 3 eggs
- 1/2 cup olive oil
- 16 oz Betty Crocker Rich and Creamy Vanilla Frosting
- 1 1/2 cups sweetened shredded coconut
- 12 large marshmallows
- 12 small marshmallows
- 12 oz pink candy melts
Instructions
- Preheat the oven to 350F.
- Prepare cupcake batter according to the box's instructions.
- Line two 12 count cupcake pans with liners and fill each liner half way with batter.
- Bake according to cupcake box's instructions, about 19-23 minutes.
- Let cupcakes cool then frost with vanilla frosting. The frosting will act as glue for the coconut so a thin layer will do.
- Dip each frosted cupcake in a bowl of shredded coconut.
- Gently squeeze a large marshmallow on the top to create the shape of the bunny foot then cut small two small slices about 1/4" from the marshmallow for the feet.
- Press two marshmallow slices (sticky side down) onto the base of each cupcake to create the bunny feet.
- Cut each small marshmallow in half and place (sticky side down) onto the center of each cupcake for the bunny tails.
- Melt pink candy melts in the microwave for 30-second intervals, stirring in between until melted. Make sure not to overheat. Melt just until there are still small clumps of unmelted wafers remaining, then continue stirring. The residual heat will continue to melt the candy melts.
- Place melted pink candy into a piping or ziploc bag, snip the tip and pipe on the the bunny feet, one large paw and 3 small paws. (Optional: a piping tip can be used to aid in accuracy, but is not necessary)
- Allow the candy melts to harden on the marshmallow feet before serving.
Notes
- The pink candy melts can overheat super easily, so make sure you melt them in the microwave in 30-second intervals. Make sure you stir in between. Melt until small clumps remain, then continue stirring. The residual heat will continue to melt the candy.
- Put the candy melt into a piping bag or a ziplock bag. Snip the tip and pipe the bunny feet. You can use a piping tip, but that’s completely optional.
- The coconut isn’t necessary, but it adds great texture for the bunny fur.
