The new school year is about to start, and things are about to get pretty hectic around here! I have been preparing the house for our new school set-up, and cannot believe it’s almost the start of the year! Having the kids home is going to be a big change, but we’re getting as ready over here as we possibly can!

Fast Breakfast Recipes

I have been trying out new recipes that are not only easy, but can be made super fast for those hectic mornings before school. I love having a few breakfast recipes that can be made in just a few minutes, because that means I can spend a little quality time with the kids before school and not worrying about making breakfast! If you’re like me, having a minute to slow down in the morning to enjoy coffee is also always a bonus. ;) You can even make these easy cupcake pancakes ahead of time and pop them in the freezer to pull out in a pinch. So simple!

Cupcake Pancake Ingredients

To make these super easy cupcake pancakes, all you’ll need is your favorite pancake batter, cooking spray, your favorite toppings, and syrup.

How to Make Cupcake Pancakes

First, make your favorite pancake batter. Spray a cupcake pan with cooking spray, and fill each cupcake tin halfway with batter. Then, add your favorite toppings. We used strawberries, sprinkles, chocolate chips, and blueberries for ours and they were so good! Put your tin in the oven and bake for 15 minutes at 350 degrees. Take the cupcake pancakes out and drizzle them with syrup, and they’re ready to serve!

Easy Pancake Recipe

These cupcake pancakes are the perfect breakfast for those busy mornings rushing to school (or Zoom!). I love them because I make a bunch on the weekend, then heat them up quickly each morning of the week! It has never been easier to make a cute and sweet breakfast!
